Chef’s Corner: Peach & Feta Salad


Peach & Feta Salad
½ pint fresh blueberries
3 to 4 peaches, diced
1 English cucumbers, sliced
½ cup crumbled feta
1 TBSs fresh lemon juice
Dressing
2 TBSs white balsamic, peach flavor if it’s available**
1 TBS Dijon mustard
1 TBS honey
1 TBS olive oil
1 TBS finely chopped mint
1 TBS finely chopped rosemary
Salt to Taste
Procedure
1) Combine the first 5 ingredients in a large serving bowl.
2) Combine the dressing ingredients in a jar with a lid and shake together to make the vinaigrette.
3) Dress the salad with the vinaigrette to your preference.
4) Serve as is or over a bed of arugula.
** If White Balsamic is not available champagne, white wine, or apple cider vinegar are reasonable
substitutes.
Note: As always, recipes are guide not rules, any number of additions or subtractions of ingredients would
be good here. Peaches are integral here, but if you don’t have one of the others skip or substitute it out.
Possible additions I can think of include raspberries, blackberries, pecans, sunflower seeds. The road goes
on forever and the party never ends.
