Outstanding Okra

Ok, I’m not going to kid anyone, Okra is not my favorite vegetable but it needs to be honored and the following 2 recipes are so good that I have been know to make these recipes even when I don’t have company and wolf down the whole batch of funky space pods myself!


Southern Potatoes and Okra

1 lb fresh okra
2 large potatoes, cubed
2 chopped scallions or ½ small onion, diced
½ cornmeal
¼ – ½ C vegetable oil (or you can use bacon drippings)
Salt and pepper to taste
1. Wash okra and cut in about ½-inch pieces.
2. Cube the potatoes into ½ inch
3. Place okra, potatoes, and onions into large bowl.
4. Sprinkle cornmeal, over mixture and stir until cornmeal is evenly distributed
5. Heat drippings or oil in large skillet over medium heat (oil should be hot, but not smoking)
6. Carefully spoon the mixture into hot oil.
7. Fry, turning mixture occasionally, until potatoes are done and mixture is nicely browned,
8. This will take about 10 minutes

Stewed Tomatoes and Okra

4 slices of Bacon (optional)
Or/ 2 T vegetable oil
1 diced onion
1 lb sliced okra
2 large tomatoes
1 C water or stock
Salt and pepper to taste
1. Chop bacon into small pieces and fry until crispy
2. Add the onions and saute until just soft
3. Add the okra, tomatoes and water/stock
4. Simmer until ½ the liquid is reduced
5. Adjust taste with salt and pepper
Add corn nibblets to this for extra goodness.
