Chef’s Corner: Pepper Day Celebration Recipes

Whipped Herbed Goat Cheese
1 clove garlic, diced fine or pressed
8 oz tub Boxcarr plain goat cheese at room temperature
4 oz. cream cheese at room temperature
1 Tbs lemon juice
1 Tbs olive oil
Kosher salt to taste
¼ cup fresh herbs, chopped (parsley, chives, dill, thyme)
Procedure:
1) Place all ingredients, except salt and herbs into a food processor and whip until creamy.
Approximately 3 to 4 minutes.
2) Transfer to a bowl and fold in herbs of choice and salt to taste
Note: you can make this without a food processor if the cheese is warmed slightly. Just whip it along
with the other ingredients in the bowl with a wire whip or large fork.
Roasted Pepper Medley
2 to 4 Peppers of choice, larger peppers like bell, poblano, or Anaheim are easier to work with
1 to 2 TBS EVOO
Salt to taste
Procedure:
Broiler: Set Broiler on high. Place peppers on a baking sheet and place peppers about 4
inches below the broiler. Allow the peppers to char, turning every so often until charred on
all sides.
Grill: Place whole peppers over direct high heat on the grill, turning until charred all over.
1) Once the peppers are charred all over place them in a bowl and cover with a lid to steam until
they are cool enough to handle.
2) When they are cool enough to handle, remove the peppers from the bowl and carefully peel the
thin skin from the peppers.
3) Cut the tops from the pepper and remove the seeds and stems.
4) Dice or cut the peppers into ¼ inch strips and toss them with the olive oil and season to taste
Hot Honey
1 C honey – ours is from Stillwasser Apiary today
2 fresh habaneros or 4 dried chipotle peppers, roughly chopped
1 Tbs apple cider vinegar
Procedure:
1) Place honey and peppers into a small saucepan and bring to a simmer over medium heat.
2) Keep on low heat for about 5 minutes, stirring occasionally.
3) Remove from heat and stir in the apple cider vinegar.
4) Allow honey to steep for at least 15 minutes and up to a day. The longer it steeps the more
flavorful it will be.
5) Pour the honey through a stranger into a storage container. It may be helpful to heat the mix a
little bit before straining.
6) You now have hot honey, and sweet hot peppers. Mmmm…spicy candy!
Roasted Pepper and Goat Cheese Tartine
Bread of Choice, we are using Breadwaala loaves today
Whipped Herbed Goat Cheese
Roasted pepper Medley
Hot honey
Micro greens or herbs of choice to garnish
Procedure:
1) Toast the bread on both sides.
2) Spread goat Cheese on toast to desired thickness, 1 to 2 Tbs is good.
3) Spoon roasted peeper medley on top, about 2 to 3 Tbs per toast.
4) Drizzle with Hot Honey and garnish with microgreens or herbs and serve.
